Rationale

Tourism and Hospitality industries are major growth industries globally and play an important role in the economies of developed and emerging countries. These industries generate substantial employment, personal and corporate income, tax revenues, foreign exchange earnings, investments, and infrastructure improvements for communities in developed and developing countries globally.

These economic factors influence opportunities that require a combination of management, marketing, operational and organisational skills, as well as a sound knowledge and understanding of the overall industry, it’s interrelationships and it’s services.

Aim

This subject aims to provide a solid introduction to the key concepts and terminology, stakeholders and relationship, innovation, current trends and management issues, as a foundation for future tourism and hospitality subjects.

It also focuses on the dynamic nature of the main operational sectors with an emphasis on potential career opportunities.

Teaching and Learning Strategy

The mode of delivery for this subject is through weekly on-campus lectures and tutorials. The experiential teaching and learning approach is enhanced through in-class presentations and discussions of contemporary industry case studies, where communicating effectively, critical appraisal and the ability to generate ideas are emphasised.

This subject also provides for engaged teaching and learning where guest lecturers from industry are invited to share experiences, providing students with industry relevant information and opportunities for networking. Course work is also supported by site inspections and excursions.

Learning Outcomes

  1. Describe the basic characteristics of the main sectors of the hospitality and tourism industries and their interactions.

  2. Demonstrate a conceptual understanding of the nature, diversity and importance of the hospitality and tourism industries.

  3. Apply theoretical perspectives and managerial concepts commonly used in relation to managing supply, demand and distribution issues facing the hospitality and tourism sectors.

  4. Identify and analyse the key service issues and service innovation trends affecting these industries.

  5. Identify the various environmental, economic and socio-cultural impacts often associated with hospitality and tourism sectors and demonstrate a solid understanding of management issues.

Assessment

Assessment 1

F&B Business Analysis: F&B business analysis. In the findings section of your report, reflect and critically analyse your experience and make recommendations.

Assessment 2

Prepare a PowerPoint presentation with narration discussing the chosen topic. You will need to demonstrate research and knowledge on your chosen topic. Referencing of articles, and backing up your discussion with examples is a requirement. You are expected to include a References Slide at the end. Use PowerPoint slides, record your narration and save as a PowerPoint presentation.

Assessment 3

The aim of the Hotel Destination Report assessment is to connect what you have covered week by week with a real life hotel somewhere in the world.
